Tofu scramble

1 Serving

Ingredients: 

  • 150g extra firm tofu
  • 1 tsp olive oil 
  • ¼ onion, sliced
  • ¼ red pepper, sliced
  • A handful of spinach, lightly steamed and chopped
  • pinch of ground turmeric, cumin and coriander
  • Salt and pepper to taste
  • Whole grain toast or a wrap, fresh coriander, dried chilli flakes, bought salsa and avocado to serve (optional serving suggestion)

Method:

  1. Fry onions and red pepper in the olive oil until softened and slightly browned. 
  2. Add crumbled tofu, chopped spinach and spices and cook for a minute until heated through. 
  3. Season to taste.
  4. Serve on whole grain toast or in a wrap with a scoop of mashed avocado, some bought tomato salsa, fresh coriander and chilli flakes.
