Peanut ginger sauce

2 Servings

Ingredients:

10ml olive or canola oil

1 large clove garlic, minced (about 1 tsp)

1 inch piece ginger, grated or minced (about 2 tsp)

¼ cup soy sauce

1 tsp (5ml) honey or brown sugar

1 heaped tablespoon (20ml) smooth peanut butter 

Juice of 1 lime or 1 tbsp vinegar (e.g. apple cider, rice, or white wine vinegar)

¼ cup water or more, if needed

Chopped chillies or chilli flakes (optional)



Method:

  1. Place the oil, ginger and garlic in a small pot on a medium-low heat and cook, stirring, for a minute or two, until softened and fragrant. 

  2. Add the remaining ingredients, heat and stir until smooth. 

  3. Add water to reach desired consistency.

  4. Add chopped chili or chilli flakes if you want to. 

  5. Serve as a dipping sauce or to add flavour to a grain bowl.
